A Word about Scaffas
"Scaffa" is an antiquated style of serving mixed drinks, probably originating in Italy; the term comes either from a family name, or from an informal Italian word for "cupboard." In the mid-19th century, ice was a rare and expensive commodity, especially during summer months. Numerous early mixed drinks were served at room temperature, without dilution. The scaffa trend was a part of this movement--the scaffa is usually a mixture of high-proof spirits and amaro or vermouth, grabbed from the "cupboard" and thrown straight into a glass!
Serving a drink without dilution, of course, creates an intense drinking experience in terms of flavor and aroma, perhaps more akin to a spirit or amaro sipped neat. As such, serving sizes are small (2oz is one serving; there are 2 servings in our small bottles and 8 servings in our large bottles) and recommended glassware would be a snifter or wine glass.
That being said, you can enjoy our scaffas in almost any fashion you prefer. They are lovely on the rocks, or served "up" after a brisk stir over ice. On a hot day they are delicious topped with soda, and if you're feeling extra indulgent the maxim "everything is better with champagne" most certainly applies. Our scaffas can be as contemplative--or as casual--as you like.
Each of our menus consist of two contrasting—but complimentary—scaffas: "Day" and "Night." The scaffas will rotate from time to time, but the "Day" scaffa will typically have a flavor profile tending more towards bright and fresh, while the "Night" cocktail will tend to be more deep and rich.
